Life in the mountains centers on the joys of the great outdoors: foraging, gardening, fishing, and, ultimately, cooking casual meals over an open fire. From a house perched in the mountaintops of Aspen, Colorado, Ilona Oppenheim devises recipes that make the best use of the bounty of her surroundings: foraged mushrooms and berries, fresh-caught fish, pasture-raised dairy, and home-milled flours. The recipes rely on quality ingredients and simple cooking techniques to make wholesome, family-centric dishes, including Kale and Feta Quiche, Ricotta and Roasted Fig Bruschetta, Porcini Fettuccine, Oatmeal Baked in Apples, Pear Crisp, and more. This romantic and delicious portrayal of life in the mountains will appeal to active gatherers, gardeners, foragers, and cooks, but will also transport the armchair reader straight to the forest. --Publisher's description.

I didn't make any of the recipes, but I salivated over the gorgeous photography, especially because it's from Aspen, CO!

One of the most gorgeous cookbooks I've ever read. Most recipes are fairly easy, but she suggests foraged or locally sourced ingredients for the recipes.
